In the last month, the grocery store where we buy our goodies (Wegmans) has had a great deal on nectaries. I mean, I'm talking $1.98 per bag kinda deal (yeah, not per pound, per bag!) And not only have they been a great deal, they've been really sweet and delicious. So, of course, I've been snatching 2 bags every time I go buy my groceries for the week (yeah, I shop weekly).
So, with so many nectarines at my fingertips, I decided to look up some recipe inspirations for nectaries. Oh my!!! So many lovely ways to use them. Salads, desserts, appetizers, and so much more. So, I figured I would share some of those really delicious recipes with you.
Now, if you've never had nectarines, here's are some quick facts. They much like a peach. In fact, they are identical with the exception of one gene. The gene difference makes peaches fuzzy and nectarines smooth (this useless fact is courtesy of the husband) :) But actually, now that we know this, for all the recipes listed below you can substitute the nectarines with peaches.

NECTARINE PIZZA WITH BALSAMIC REDUCTION

FISH TACOS WITH NECTARINE AVOCADO SALSA
This recipe calls for Mahi Mahi but don't get worked up about it. If you don't like Mahi Mahi or don't want to spend the money (it can be a little on the expensive side) then substitute it with the fish of your choice. It will still be delish! I have used cod and even salmon with this recipe.
NECTARINE CUCUMBER SALAD
This recipe doesn't have a vinaigrette and it is still good. However, sometimes I do add my own simple vinaigrette and we love it. Here's the recipe for that! :)
SIMPLE SALAD VINAIGRETTE
1 TBSP olive oil
1 TBSP Peach White Balsamic Vinegar (or rice vinegar)
1/4 TSP honey dijon mustard
Salt and pepper to taste.
Instructions: Whisk all ingredients and pour as much dressing as you want over salad. It's so good!
