Okay...if you like brown rice and have ever cooked it, you know it could take a little bit of time to do it and to get it just right. Yeap, I've been there but then, I found this baked brown rice recipe it and I haven't looked back since. I tell you, it is THE BEST way to make it. I tweaked the recipe a little and let me tell you it's not only SO easy to make but it is yummy. Go on, give it a try, you won't regret it!
What you'll need:
1 1/2 cups brown rice
2 1/2 cups water OR chicken stock
1 Tbsp butter OR olive oil
1 Tsp salt
How to make it:
Preheat oven to 375 degrees F.
Put salt and butter in an 8 in square glass baking dish and add boiling water and mix it with a fork until butter is melted (I boil my water in a kettle). IF USING CHICKEN STOCK: bring chicken stock, butter and salt to a boil and then pour it onto the baking dish. Add the rice to the baking dish, stir to combine and cover with foil. Bake in the middle rack for 60 minutes.
After 60 seconds your rice is ready! Take it out, remove foil (watch out for the steam!) and fluff with a fork.
Okay! That's it! Now you're ready to enjoy with some orange chicken or grilled salmon or whatever your little heart desires! Enjoy!
